Introduction:

A dense, nutrient-dense loaf designed for gentle digestion and small hands. Made by blending jumbo oats into a smooth flour and combining them with milled nuts and seeds, this loaf requires zero kneading or yeast, relying on psyllium and flax to create a sturdy, sliceable bread packed with plant omegas and prebiotic fibre.

Ingredients:

Dry Ingredients:

  • 285g Organic Jumbo Rolled Oats (ground into oat flour)
  • 200g Linwoods Milled Flaxseed, Almonds, Brazil Nuts & Walnuts (1 full pack)
  • 15g Psyllium Husk Powder
  • 1 tsp Fine Sea Salt

Wet Ingredients:

  • 350ml Tepid Water
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Pure Maple Syrup (optional)

Method:

  1. Grind the Oats: Add the 285g rolled oats to a blender or food processor and blitz until finely milled into a flour.
  2. Whisk Dry Ingredients: In a large mixing bowl, combine the freshly ground oat flour, the entire pack of Linwoods milled blend, psyllium husk powder, and fine sea salt. Whisk to distribute evenly.
  3. Incorporate Wet Ingredients: Pour in the tepid water, olive oil, and optional maple syrup. Stir vigorously with a wooden spoon until the mixture forms a thick, uniform paste.
  4. Pack into Tin: Line a standard 1lb loaf tin with non-stick baking paper. Transfer the dough into the tin and press down firmly using wet hands or the back of a spoon to compact it completely and remove any air pockets.
  5. Rest & Bind: Allow the tin to sit at room temperature for at least 2 hours (or covered in the fridge overnight). This allows the psyllium, oats, and flax to absorb the water and form a sliceable structure.
  6. Bake: Preheat your oven to 180°C (160°C fan / Gas Mark 4). Bake in the tin for 20 minutes, then carefully invert the loaf out of the tin directly onto the wire oven rack and bake for another 35–40 minutes until firm and lightly golden.
  7. Cool Completely: Place on a cooling rack until totally cold before slicing with a sharp serrated knife.
