Introduction:
Store-bought jarred pasta sauces are often packed with industrial thickeners and hidden sugars. This quick whole-food recipe uses chopped tomatoes and a tin of four-bean salad blitzed into an ultra-smooth, creamy sauce that completely hides pulse textures for picky eaters. Sautéed with sweet onions, golden smoked tofu, and soft brown lentils, it provides steady energy and gentle fibre in minutes.
Ingredients:
The Base & Pasta:
- 100g–120g 100% wholemeal pasta (or Mr Organic red lentil/chickpea pasta)
- 1 tin (400g) organic chopped tomatoes (or plum tomatoes)
- 1 small yellow or red onion, finely diced
- 1–2 tbsp organic extra virgin olive oil (for frying and drizzling)
- Freshly grated Parmigiano-Reggiano, to finish
The Plant-Protein & Pulse Boost:
- 1 tin (400g) four-bean salad, drained and rinsed
- ½ tin (approx. 100g–120g) cooked brown or green lentils, drained and rinsed
- 100g–150g organic smoked tofu, cubed
The Steamed Veggie Side (Choose Any):
- Handful of broccoli florets, sliced green beans, or sweet carrot batons
Method:
- Boil the Pasta & Steam the Veg: Bring a large pot of water to a boil. Cook the wholemeal pasta according to packet instructions (typically 8–10 minutes). Place your chosen vegetables (broccoli, carrots, or green beans) into a steamer basket over the boiling pot to cook simultaneously for 4–5 minutes until tender-crisp. Drain the pasta and set aside.
- Sauté the Aromatics & Tofu: In a wide pan or skillet, warm 1 tbsp extra virgin olive oil over medium-low heat. Add the diced onions and cubed smoked tofu together, gently frying until the onions are soft, translucent, and sweet, and the tofu is golden.
- Blend the Smooth Sauce: Add the tin of chopped tomatoes and the drained four-bean salad directly into a blender. Blitz on high until completely silky and smooth with no visible bean skins.
- Simmer & Combine: Pour the smooth tomato-bean sauce straight into the pan with your sautéed onions and tofu. Stir in the ½ tin of lentils and simmer gently for 3–5 minutes until heated through and well integrated.
