Introduction:

Swapping standard white or brown rice for a 100% legume rice (such as chickpea or red lentil rice) provides up to double the protein and triple the fibre in just 11 minutes of cooking time. Paired with lightly steamed greens, crispy sweet potato matchsticks, and a whole-food toasted sesame dressing, this recipe offers a restorative family meal without complicated cooking steps.

Ingredients:

The Base & Produce:

  • 100g Mr Organic chickpea rice or red lentil rice
  • 1 sweet potato, sliced thinly into matchsticks
  • 1 red pepper, thinly sliced (kept raw for crunch and vitamin retention)
  • Generous handful of green beans, carrots, and broccoli florets (cut into bite-sized pieces)
  • 2 tbsp extra virgin olive oil (for frying and dressing)

The Protein (Choose One):

  • 150g organic smoked tofu, cubed (pan-fried), OR
  • 1 organic wild salmon fillet (baked)

The Warm Sesame Satay Sauce:

  • 2 tbsp sesame seeds
  • 2 tbsp extra virgin olive oil
  • 1–2 tbsp organic peanut butter (optional, for a creamy satay finish)
  • 1 tbsp organic soy sauce or tamari (optional)

Method:

  1. Toast the Seeds: Place sesame seeds into a dry frying pan over medium heat. Toast for 2–3 minutes, shaking frequently, until golden amber and nutty. Tip immediately into a small bowl to prevent burning.
  2. Boil the Rice: Bring a pot of water to a boil, add the chickpea or red lentil rice, and simmer steadily for 11 minutes. Drain thoroughly.
  3. Cook the Protein & Sweet Potato:
    • If using Tofu: Heat 1 tbsp olive oil in a skillet. Add the sweet potato matchsticks and cubed smoked tofu, frying on medium heat until the potato is tender with crisp edges and the tofu is golden.
    • If using Salmon: Preheat your oven to 200°C (180°C fan). Drizzle the salmon fillet with a little olive oil and bake on a tray for 12–15 minutes until tender.
  4. Steam the Greens: Place the green beans, carrots, and broccoli florets into a steamer basket over boiling water. Steam for 4–5 minutes until tender-crisp.
  5. Whisk the Dressing: In the bowl with your toasted sesame seeds, whisk together the extra virgin olive oil, peanut butter (if using), and optional soy sauce. Whisk in 1 tablespoon of hot water from the cooking pot to thin it into a silky, pourable sauce if needed.
  6. Assemble: Toss the warm legume rice, crispy sweet potato, and steamed greens in a wide bowl. Top with raw red pepper slices, your cooked protein, and drizzle with the warm sesame dressing.

  • Deconstructed Plate: To minimise mealtime friction, serve components in distinct sections on a divided plate: a scoop of naturally sweet legume rice, steamed carrot and broccoli “trees”, crispy sweet potato matchsticks, and protein strips, with the sauce on the side as a dip.
