Introduction:
A lighter, pan-tossed cousin to our blended tomato sauce. Swapping tinned tomatoes for hand-chopped fresh tomatoes creates a gentle, summery pan base that collapses just enough to coat the pasta without becoming heavy. Gently frying sweet onions, golden smoked tofu, and juicy tomatoes together, then finishing with a rich lather of extra virgin olive oil and a very generous snow of Parmigiano-Reggiano, turns simple whole pantry pulses into an effortless family dinner.
Ingredients:
The Fresh Base & Pasta:
- 100g–120g 100% wholemeal pasta (or Mr Organic red lentil/chickpea pasta)
- 3–4 medium ripe tomatoes (or a large punnet of cherry tomatoes), freshly chopped
- 1 small yellow or red onion, finely diced
- 2–3 tbsp cold-pressed organic extra virgin olive oil (for frying and finishing)
- Generous portion of freshly grated Parmigiano-Reggiano, to finish
The Protein & Whole-Pulse Boost:
- 100g–150g organic smoked tofu, cubed
- 1 tin (400g) four-bean salad, drained and rinsed
- ½ tin (approx. 100g–120g) cooked brown or green lentils, drained and rinsed
Optional Steamed Veggie Side:
- Handful of broccoli florets, sliced green beans, or sweet carrot batons
Method:
- Boil the Pasta (and Optional Greens): Bring a pot of water to a rolling boil. Add your pasta and cook according to packet instructions (typically 8–10 minutes). If serving steamed greens on the side, place a steamer basket over the boiling pasta water and steam broccoli or carrots for 4–5 minutes until tender-crisp. Drain pasta, reserving 1–2 tablespoons of starchy pasta water.
- Fry the Aromatics, Tofu & Fresh Tomatoes: Warm 1 tbsp extra virgin olive oil in a wide skillet or pan over medium heat. Add the diced onion and cubed smoked tofu together, gently frying until the onions soften and sweeten and the tofu edges turn golden. Add your hand-chopped fresh tomatoes directly to the pan, cooking for 3–4 minutes until they begin to release their sweet juices and break down into a light, rustic gloss.
- Warm the Pulses: Stir the rinsed four-bean salad and lentils straight into the skillet. Let everything warm through for 2 minutes, allowing the pulses to soak up the pan juices and sweet tomato essence.
- Toss, Lather & Finish: Tip the cooked pasta straight into the skillet (or combine everything in a wide serving bowl). Lather generously with another 1–2 tablespoons of extra virgin olive oil and a splash of reserved cooking water to emulsify the juices. Fold through a very generous handful of finely grated Parmigiano-Reggiano so it melts gently into the warm olive oil base.
- Serve: Plate up warm, topped with an extra dusting of Parmigiano-Reggiano.
Toddler & Family Serving Notes:
- Lighter Summer Texture: Because the tomatoes are freshly chopped rather than pureed, the dish remains light, vibrant, and Mediterranean in style.
- Deconstructed Option: For toddlers who prefer separated food, serve a scoop of plain pasta tossed with olive oil and cheese, alongside little piles of golden smoked tofu cubes, soft whole beans, and sweet cooked tomato pieces on a divided plate.
